Happy Mothers Day

My mother-in-law, Betty, gave me a wonderful gift one year. It was an old ledger with dates beginning in 1877. It is filled with details on lost animals and damages they had caused. It lists responsible party names and fines paid. All great genealogical evidence of days gone by. In the back pages, that were never used for recordkeeping, is my favorite part—old-time recipes! Handwritten, spattered and stained from kitchen use. The book is worn and well used. I’d like to share one of my favorite recipes with you this Mother’s Day—a recipe that mother’s from our past have cooked for their loved ones.

Dutch Apple Cake

(Serve Hot or Cold)

1 cup milk

2 cup flour

3 teaspoons baking powder

1 tablespoon sugar

1/4 teaspoon salt

4 tablespoons fat

1 egg

Mix flour, baking powder, sugar and salt. Cut in fat with knife and add egg and milk. Mix just enough to hold ingredients together. Pour into greased shallow pan. Add topping.

Apple Topping

1 1/2 cup sliced apples

1/2 cup water

1/2 cup sugar

1 teaspoon cinnamon

2 tablespoons butter

Mix apples and water. Cover and cook slowly 5 minutes. Add rest of ingredients and cook 2 minutes, stir constantly. Cool. Spread on soft dough & bake 20 minutes in moderate oven.

I’ve made this recipe several times and it is one of our family favorites. We like it hot with a small dip of vanilla ice cream.
